Ingredients

  • 200 g flour
  • 100 g melted butter
  • 3 eggs
  • 100 g milk
  • 150 g reblochon cheese
  • 100 g bacon
  • 1 packet baking powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 180°C, fan mode.
  2. Prepare the dry ingredients by sifting flour with baking powder, salt, and pepper in a bowl.
  3. Mix the wet ingredients in another bowl by beating the eggs. Add milk and melted butter, then mix well.
  4. Combine the wet mixture with the dry ingredients until a smooth batter forms.
  5. Add in the cubed reblochon and crumbled cooked bacon, mixing gently.
  6. Fill the madeleine molds three-quarters full with batter.
  7. Bake for 10-12 minutes until golden brown.
  8. Allow to cool slightly before unmolding and serving warm.

Notes

Let the batter rest in the refrigerator for 30 minutes before baking for even fluffier madeleines. You can substitute reblochon with camembert for a different flavor.
